Mussels in Poblano-Cilantro Broth
serves 4
Ingredients
- 1 C dry white wine
- 1 poblano chili, chopped
- 1/4 C shallots, chopped
- 1/4 C cilantro, chopped
- 1/4 t smoked paprika
- 3 cl garlic, sliced
- 8 oz clam juice
- 2 lbs mussels
- 1 T fresh lime juice
- 1 T butter
- crusty bread
Instructions
- Bring the wine, poblano, shallots, cilantro, paprika, garlic and clam juice to a boil. Add the mussels, cover and cook until the shells open. Remove the mussels.
- Reduce the broth to 1 C. Stir in the lime juice and butter, then dress the mussels.
- Sprinkle with more cilantro, serve with crusty bread.
