Mussels in Poblano-Cilantro Broth
serves 4

Ingredients

Instructions

  1. Bring the wine, poblano, shallots, cilantro, paprika, garlic and clam juice to a boil. Add the mussels, cover and cook until the shells open. Remove the mussels.
  2. Reduce the broth to 1 C. Stir in the lime juice and butter, then dress the mussels.
  3. Sprinkle with more cilantro, serve with crusty bread.
